Tasting notes
Bold, dark and distinctive. A spirit-led single malt that tastes like no other Deeside whisky.
- Nose
- Roasted almonds and malty, biscuit-like notes, with vanilla pod and a touch of honey. A little ripe orchard fruit sits in the background.
- Palate
- Rich and mouth-coating. Dark chocolate and freshly roasted coffee lead, with toffee, cereal sweetness and a warming streak of oak spice. A drop of water softens it towards mocha and vanilla.
- Finish
- Long, with a pleasant roasted bitterness. Espresso and dark chocolate linger.

How It Was Made
What arrives in the cask is already worth drinking
THE MALT BILL
Three malted barleys go into the mash, each doing a different job. Most Scotch is made from a single distilling malt chosen on spirit yield. A three-malt bill costs yield and buys flavour. The three malts are set out opposite.
THE WASH
Most of Scotland ferments its wash to about 8% ABV. This one is brewed to 12.1%. A concentrated, high-gravity wash means the flavour compounds arriving at the still arrive concentrated too - and each litre carries more alcohol, so the stills use less water, heating and cooling for every bottle made: a more sustainable way to run a small still house. It is a brewer's decision rather than a distiller's, and it sets up everything that follows.
FERMENTATION
A minimum of seven days. Commercial fermentations commonly run 48 to 72 hours, which is long enough to convert the sugar and no longer. Past that point the yeast gives way to lactic bacteria, and the wash begins to develop the esters and acidity that carry through distillation as fruit. The additional days are the difference between a wash that is finished and a wash that is ready.
DISTILLATION
The stills are run slow and cool, to simmer rather than boil. A gentle run raises copper contact and reflux, and returns a cleaner, more articulate cut. It is a slower way to fill a cask and a better one.
DISTILLATION
Spirit is reduced to filling strength with water drawn from the Pannanich Wells at Ballater, then matured in first-fill ex-bourbon barrels. American oak was chosen to give structure to a flavour-dense spirit without covering it. This release is drawn from those barrels with further stock of the same character vatted in, bottled at cask strength, 56.7% vol, and not chill-filtered.
THE RELEASE
An outturn of 2,020 individually numbered 70cl bottles - one run, sized for the year Burnobennie was incorporated - released at cask strength, 56.7% vol, at £79 recommended retail. Trade allocations are set against that number.
About this release
Another step in our journey
Burnobennie was incorporated in 2020 and began distilling in 2021. This is the first bottling to leave the distillery. The house position is distillate-led: every decision below costs either yield or time, and each one is taken to put more flavour into the cask before the cask is asked to do anything.
Pale, chocolate and cara malts go into the mash. The wash ferments for a week, and the stills run slow and cool, to simmer rather than boil. The spirit is reduced with Pannanich Wells water before filling, then matured in first-fill ex-bourbon casks. This release is a vatting of seven of them, drawn from some of the earliest stock.
It is bottled at cask strength, 56.7% vol, and is not chill-filtered. One run of 2,020 individually numbered 70 cl bottles.
