Burnobennie Distillery is not only a producer of Scotch whisky, but also the home of Chapter 7 Whisky, our independent bottling arm dedicated to selecting, maturing, and bottling exceptional casks from across Scotland.
Independent bottling is a long and respected tradition in Scotch whisky. While distilleries produce spirit, independent bottlers search for unique casks, allowing whisky lovers to discover alternative expressions of famous distilleries — often from single casks, at natural colour and without chill filtration.
Chapter 7’s philosophy is simple:
We don’t make whisky, we discover it.
Our role is to find remarkable casks, mature them patiently, and bottle them at the moment they reach their peak.
What is an Independent Bottler?
An independent bottler purchases casks from distilleries and matures them in their own warehouses or selected locations. Over time, each cask develops its own personality. When the whisky reaches its peak, it is bottled as a single cask or small batch, often at cask strength and with minimal intervention.
This allows independent bottlers to:
- Bottle single casks
- Release unusual ages, vintages and finishes
- Showcase distilleries in a different style
- Bottle whisky at natural colour and without chill filtration
- Offer limited editions for collectors and enthusiasts
Independent bottlings are often produced in very small quantities — sometimes only a few hundred bottles from a single cask.
