Situated on the outskirts of Banchory, is Burnobennie Distillery. We are home to whisky enthusiasts creating the best tasting spirits we can, using our incredible state-of-the-art brew kit, designed and installed by industry leaders, Gravity Systems.

Having been inspired by the incredible quality of craft beer in the UK, we reached out to ex-Beavertown Head Brewer, Jenn Merrick to design our wash recipe. At the distillery we use Crystal malt, Chocolate malt, Rye & Corn - experimentation with our wash is so important.

The Burnobennie Mash Lauter Tun vessel combines both a Mash Tun and Lauter Tun with the addition of a steam jacket, the only kit of its kind in the world. The system has been designed specifically to be able to accommodate wash for whisky distillation as well as beer and rye.

We ferment our wash to around 14% ABV for no less than 168hrs.

Whisky writer Charles Maclean, went on record to say that the biggest mistake in his whisky tasting career, as that he thought our 2-year-old spirit was 18 years old!

We are working with a farmer 1.8 miles away from our distillery, as well as one in Caithness to produce 300 acres of biodynamic barley, using direct drilling and regenerative farming techniques, to ensure we can have the best quality barley but most importantly not damaging the planet in the process. We are aiming to have 100% of our barley coming from these farms in the next 2 years, having full traceability.
